Overnight Crockpot Oatmeal

We all know that mornings can be slightly hectic when everyone is trying to get the door for school, or work, or early morning appointments. And let's face it. With little time to prepare, breakfast can often be a granola bar on the way out the door (or in some cases, nothing at all!)
But with this handy, overnight oatmeal, breakfast is ready as soon as you wake up!




Here is my recipe for nutritious, delicious, overnight crockpot oatmeal.

 
 
1 cup of steel cut oats
1/4 cup of quinoa
1/4 to 1/2 cup of brown sugar
1 tlbs. of cinnamon
pinch of salt
1-2 tsp. of vanilla
2 eggs
4 1/2 to 4 3/4 cups of water
 
Variations, add nutmeg, chopped apple, or blueberries. Yum!
 
Before you go to bed, combine steel cut oats, quinoa, brown sugar, cinnamon, and salt together in a small crockpot.
Combine vanilla, eggs, and water together and pour over steel cut oats mixture. Mix.
Turn crockpot to low.
